{Recipe} Healthier Apple Crisp

So I wanted a healthier version on apple crisp so I tried this one I found on SparkPeople this one reduces the amount of butter and sugar used. Although I did tweak it to fit my personal tastes. The topping turned out much drier than my old recipe and the apples didn't turn to mush as much. So it was like granola over baked apples.



Ingredients:
8 medium baking apples, cored, sliced thin
2 tsp cinnamon
2 Tbsp sugar
2 Tbsp flour

Topping:
1 cup quick oats
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp allspice
1/4 cup brown sugar
4 Tbsp heart-healthy margarine


Directions:
Mix first four ingredients and place into 9-inch (square or round) baking dish.
In small bowl, mix topping ingredients until crumbly. Sprinkle topping over the apples.
Bake at 325 degrees until apples are soft and topping is golden brown (about 30 minutes).

Makes 9 serving @ 336 calories

{Recipe} Pumpkin Zucchini Muffins (Repost)

I think I mentioned in another post how my blender broke, well that made this recipe problematic. I screwed up when I froze my zucchini, while it was still edible it was un-shreddable.  So I diced it, yeah don't do that shredded it. It doesn't affect the taste as much as the texture. I should have just scrapped the zucchini but I'm stubborn and don't like to waste food.
They were still a big hit and the girls down to worked loved them.




Ingredients-
Wet Ingredients:
  • 2 Cup, Pumpkin Puree {How to make your own}
  • 2 Cups Shredded Zucchini
  • 1 Cup Buttermilk
  • 1 Cup Oil
  • 1 Egg
  • 1 Banana
  • 2 tsp, Pure Vanilla Extract


Dry Ingredients:
  • 4 Cup, All Purpose Flour
  • 1 Cup, Sugar 
  • 1/2 Cup Brown Sugar
  • 1 1/2 tbsp Cinnamon
  • 1 tbsp Baking Powder
  • 1 tsp Baking soda
  • 3/4 tsp Salt


Directions:
Preheat oven to 375 degrees F. and prepare muffin pans this make 36 muffins.
In a large bowl, stir together all the wet ingredients until well combined. Set aside.
In a separate bowl, whisk together all dry ingredients. Using a dry spoon, dig a well in the centre of the dry ingredients, and pour in the wet ingredients. Incorporate the wet into the dry, stirring only until almost combined. Gently fold the mix. All the dry ingredients should be mixed in at this time and look like below.


Spoon batter into prepared muffin cups, filling about 3/4 full. Bake 20-25 minutes, until a fork or toothpick comes out clean.
1 muffin is 129 calories

{Recipe} Apple Crisp Smoothie

I love apple crisp, and tend to make it quite a bit in the Fall. I found an Apple Pie smoothie recipe and thought why not an Apple Crisp one. So I took my apple crisp recipe and smoothied it.
The oatmeal gives it an odd texture, I thought. After doing a little research I found someone who recommended letting the oats sit in milk overnight to soften which makes them blend better. I haven't tried it but it makes sense.



Ingredients:
1 Apple
1/4 Old fashion oats
1/2 Cup fat free Milk
1 tsp Vanilla extract
1 tsp Cinnamon
1 tsp Brown Sugar

Direction:
Peel and de-core apple, then chop into pieces. Place in microwave for 1-2 minutes until soft.
Put milk, oats and apples in blender and mix well. When smooth add the rest of the ingredients. For a thicker smoothie toss in a few ice cubes.
240 calories a serving, Enjoy!

Review: Ok so I have to admit this one was a lot better than the previous volumes. Harley seems to be find herself and wasn't so scattered in this installment. There was less slapstick humor, yet it still has a witty and filled with sassy that I expect from Harley. This also focused more on Harley and less on her gang or Red Tool. Although we do get a little backstory for him, which wasn't horrible.
I actually enjoyed the story lines in this volume as well. Seeing Harley team up with Power Girl was nice, although the ending of that story was a bit anticlimactic. The cannibal story line was great though, I really liked that one and found myself unable to put down my e-reader during it. I love seeing Harley deliver some butt- whooping. I even liked the time travel, Bat-fan storyline, and I'm not a big fan of time travel.
This volume has been the best so far with good plots, witty humor, and great artwork.

She believed she could so she did 10k

I really don't know what possessed me to agree to do the She believed she could so she did 10k. Since I really haven't been running lately and I totally haven't trained for a 10k. Yet I did it and actually achieved a personal best. I received this kit from Running on the Wall and it was amazing.

I got a metal, race bib, car decal, necklace, shoe charm, two stickers, and a quick dry tank. I love everything it's great quality, the necklace is even double sided like the medal. The tank fits great just the way I like it, not to tight but not so big I have to wear something under it to keep my bra from showing. The material is light and dries quickly, so your not soaked in sweat. The only down side is DK refuses to let me put the decal on the van, yes he's a kill joy.
So I did the race Sunday and even though I haven't been doing long runs lately I managed a personal best.
I'm pretty proud of this actually, as I think the last 10k I did was like an hour and a half. Of course I did it on the treadmill with my Zombie's Run app.

{Recipe} Pear & Apple Crisp

We were given a whole grocery bag of pears by Hubby's Dad. The kids have eaten a bunch but you can only eat so many pears before you get sick of them. So I've been trying to find things to make, I tried pear crisp using the apple crisp recipe but reducing the sugar since the pears are already pretty sweet. It didn't turn out well, unbearably sweet in my opinion, J and Hubby didn't like it either.
So I decided to try to make Pear/ Apple Crisp. Which was actually really good. I used Macintosh and Granny Smith apples with the pears. I think the tartness of the Granny Smith helped even out the flavor.

Ingredients:
Fruit Mix-
4 Med Apples (any kind you like)
4 Med Pears
2 Tbs Brown Sugar
1 tsp all spice
3/4 Cup Water

Crisp Mix-
1 Cup Old Fashion or Quick Oats
1/3 Cup Flour
3/4 Cup Brown Sugar
1/4 tsp Salt
1/2 Cup Butter or Margarine

Peel, Slice and Core Apples and Pears. Place in 8x8 baking dish set aside. Mix rest of fruit mix ingredients and pour over fruit. Set aside.

Combine the dry ingredients in the crisp mix, while melting the butter. Add in melted butter and stir until clumpy. Sprinkle on top of fruit mix.

Bake at 375 degrees for 30-40 mins or until the crisp is a nice golden color.

Makes 8 servings @ 296

{Recipe} Homemade Apple Crisp (Repost)

I absolutely love apple crisp, and usually make it via a box or buy it pre-made. For some reason I thought this was hard to make, boy was I wrong. Today I made it from scratch!!! It was super easy and all I needed was ingredients that I had in the cupboard.



  • Apples 4-6 peeled, cored, and slice (how many you use will depend on how thick you slice them)
  • 2 to 3 tablespoons granulated sugar (depends on how sweet your apples are and how sweet you want it.
  • 3/4 teaspoon ground cinnamon
  • couple pinches salt
  • 1/2 cup packed light brown sugar
  • 1/2 cup uncooked rolled oats
  • 1/3 cup all-purpose flour
  • 4 tablespoons cold unsalted butter, cut into small pieces
Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  2. Combine the apples, granulated sugar, cinnamon, and 1 pinch of the salt in a large bowl and toss to coat. Place the apple mixture in the prepared baking dish and set aside.
  3. Using the same bowl, mix together the brown sugar, oats, flour, and a pinch of salt until evenly combined. Blend or cut in the butter pieces until small clumps form and the butter is well incorporated.
  4. Sprinkle the topping evenly over the apples and bake until the top is crispy and the apples are tender, about 40 to 60 minutes.
Make 8 servings @ 267 calories

{Recipe} Applesauce Oatmeal Muffins


Applesauce Oatmeal Muffins
Recipe makes 1 dozen

Ingredients:

1 cup quick oats
1 cup buttermilk
1 cup flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 cup brown sugar
2/3 cup applesauce
1 egg

Directions:
  1. Place oats in a small bowl, pour in buttermilk. Let sit for 15 minutes at room temperature.
  2. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  3. In a large bowl, stir together flour, baking powder, baking soda and brown sugar. Stir in oat/buttermilk mixture, applesauce and egg; mix well. Pour batter into prepared muffin cups.
  4. Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of muffin comes out clean.


 Makes 12 muffins @ 119 calories each

Review: This is book 2 in the Spindrift novellas. Just like in the first book we have a girl who's too smart for her own good. Donna is a genius, who even intimidates her teachers. The only one who gives her the time of day is a classmate named Greg. When he asks her on a date, she agrees to go not knowing it would turn into a nightmare.
The story takes on underage drinking and youth violence. Donna blames herself for what transpires, yet the whole thing left me confused. She never really faced any consequences for what happens, or anyone who blamed her. Greg even gives her a pass, and still wants to date her. Yet she just avoids any real conflict and runs off to Spindrift.
This left me feeling the plot was sort of blah. Once we moved pass the date, it was poor me from Donna. I was interested in seeing a bit of Spindrift and to see Corliss again, but most of this installment seemed phoned in.
